My fiance and I were craving chocolate, so I decided to whip up these cookies. They took no time at all to make, and bake. These cookies are chewy, rich and absolutely delicious! It's hard to believe they are gluten AND dairy free!! They have a great texture and are so simple and quick to make. I will definitely be making these cookies again, YUM!
Preheat oven to 350 degrees, then combine:
2 1/3 cups confectioners' sugar
1/4 teaspoon salt
1 cup cocoa powder
3 egg whites
2 teaspoons vanilla
1/3 cup chocolate chips (optional)
The recipe is so simple, you can literally throw all ingredients in a bowl and start mixing. I used a whisk to incorporate everything, then switch to a spatula near the end.
Once all ingredients are mixed, line a cookie sheet with parchment paper. Afterwards, grease the parchment paper. Do not use cooking spray, the cookies will stick. The mixture is very moist and the pan you're baking on must be greased well. Then place cookies in the oven for 8 minutes. Do NOT over bake.
The mixture will spread a little, but not much while baking. Other ingredients could be added to the recipe as well. Such as chopped almonds, peanut butter and even espresso powder.
